Borscht, a simple beet soup, has deep roots in Jewish cooking. Not only can it be eaten hot in the winter or chilled in the summer, this vibrant pink soup is such a big part of Jewish Cuisine that it gave its name to the Borscht Belt, the upstate NY area that housed Jewish vacation hotels and camps in the 1950s. Join Eve Lunt, as she teaches you how to make a simple homemade vegetarian version of borscht. Cost: $10
